Coconut Shrimp Over Rice Recipe..

Hey Everyone!
If your looking for a Sweet and Crunchy Shrimp Dish, I've got the right one for you. 
Well, most of you know that I love YouTube and I'm always looking for new dishes to feed my family. The recipe is from a challenge called The Art of Cooking. If you want to make "authentic" Chinese cuisine look no further than the Art of Cooking. The directions are simply and easy, plus you probably have most of the ingredients in your kitchen.

Ingredients Needed

(Breading for the Shrimp)
1 Egg White
1/8 tsp Salt
1 /4 Cup Corn Starch
2 Tbs Water
2 Tbs Flour
1 tsp Baking Powder
1 Tbs Oil


(Coconut Sauce Recipe)
1 3/4 Tbs Coconut Milk
1 1/4 Tbs Condense Milk
2 tsp Sugar
1 Cup of Mayo
2 Tbs Milk

Lettuce
Tomato
Cooked Rice
Cooking Oil for Frying 


Coconut Sauce
Mix ingredients all together and put in Fridge for about a hour or two.


 It should become thick like this.. 



Follow directions on the video for Breading Batter.
Mix all ingredients together one at a time making sure everything is mixed thoroughly.



It should be smooth like below..

Put shrimp in batter..



 Over medium to high heat and fry shrimp for about 20 - 30 seconds until light golden brown. 
You'll be frying these twice.
Make sure you fry in batches, not all at once..

Take out and let drain



After all batches are done.
On high heat put shrimp back into oil.



Fry until medium golden brown.



At rice on plate, put lettuce and tomato over then add shrimp last.



Drizzle coconut mixture over.
