Here with another easy and tasty dinner or even lunch Idea for the end of summer.
It's Blacken Tilapia with Black, Corn, Avocado Salad over Cilantro Lime Rice with a Chipotle Cream Sauce..
Doesn't that look Delicious..
My Family Loved It. Will my hubby and middle daughter love it. My baby girl isn't a seafood eater. Don't ask me why, I have no idea because being from New Orleans, that's all we do.
She was born in Texas, so I'll let it pass..
It's seems like alot of ingredients but it's super easy to put together.
(For the Blacken Fish)
Tilapia or any fish you like
1/2 of stick of Butter
(All Spices are put in a cup, 1/2 teaspoon of each)
Old Bay Seasoning (optional)
Pre-Heat oven 375 degrees
Canned or Frozen Corn Thawed Drained
Canned Black Beans Drained
1 Medium Tomato
1/4 Red Onion
1/4 cup of Cilantro
1 Lime Juice
Chop veggies up and put in bowl.
Cook rice as directed and then add Cilantro
Chipotle Sauce Ingredients
1/4 Cup Canned Chipotle
1/2 Cup Sour Cream
Put it blender, 2 seconds and your done..
Melt butter on a lipped plate in a microwave.
Clean and dry fish
Dip fish into butter and place on butter cookie sheet.
Take 1/2 tsp of spices and sprinkle on fish.
You don't have to do both sides.
Put in oven for 20 minutes and under broiler for 3-5 minutes.
Put Rice in plate, add Salad, then fish on top.
Drizzle Chipotle Sauce on or around fish.
It may sound like alot of steps and ingredients, but once you put the rice on, fish in the oven, you can make the salad. Then 2 minutes to make sauce, it's a easy and healthy week night meal.
