Happy 4th of July Mini Cheesecake Cupcakes!!!!



I asked the family what they wanted me to make for the 4th of July and this was the answer..

Mini Cheesecake Cupcakes 



I got the recipe from

I followed the recipe to the T and they came out perfect.. 

Ingredients for the crust are:
5 graham crackers 
2 Tbs. sugar
3 Tbs. butter (melted)
pinch of salt

Combine ingredients then divide it evenly into cupcake pans with liner.



Ingredients for filling
2-8 oz cream cheese
1/2 cup sugar
1 tsp. vanilla
2 large eggs
1/4 cup sour cream 
2 tsp. lemon zest
pinch of salt

Combine sugar and lemon zest, rub together until you see the sugar gets a little yellow hue.
Put soften cream cheese in mixer and mix until smooth. 
Add lemon-sugar mixture in cream cheese in mixture, blend until smooth.
Add vanilla and pinch of salt. 
Blender until creamy.
Add both eggs, one at a time.
Lastly, add room temp sour cream until thoroughly combine..  



Put filling on top of graham cracker mixture'
Bake in a 325 degree oven for 20 minutes. 
Some may have cracks in then, that's OK nothing wrong.. 


Sunken down after a hour in the fridge, it's OK we're about to add filling.. 

Strawberries and Strawberry Preserves

Blueberries and Blueberry Preserves 

Clean, cut and dry both berries.
On top of cooled Cheesecake add Preserves, then fruit on top.. 

All done!!
